Is sushi gluten free?

Sushi. It looks like such an easy gluten-free meal choice, but it comes with numerous hidden risks.

I go back and forth with it. When I initially went gluten-free in 2011 I relied heavily on the Japanese special, and the one roll at the one sushi dining establishment that I had actually vetted. Note: Consuming as a whole was quite dull throughout that time. I was afraid of everything.

Is sushi gluten free? As I found out the ropes of my new diet and was switched off a bit after a bad reaction at a new restaurant, I rarely ate sushi for a while. After investing a week in Japan last fall, it fell back into favor with me. In fact, I believe I just chose what's for supper tonight.

Back to those pitfalls.

There's so much more to consuming gluten-free sushi than preventing soy sauce (but please do not eat the soy sauce). Gluten is concealed in everything from the sushi itself, to the sauces that top it, to the kick of heat we add to it.
